We have had the purple beans. I purchased them one time up in Canada. (I love fresh green beans.) I cooked them for dinner and they turned green! They were very good and tender.

Yes! The purple beans taste great and they DO turn green when cooked! At least the ones I had did too!

Purple beans are the GREATEST when you have younger children helping pick. So easy to see, whereas green beans are experts at hiding! And kids think a purple vegetable is fun!
They do turn green when you cook them, so you have to leave them raw to eat them purple. Great colour in a salad!

Me also Kate!! My dear old Dad used to grow 'purple kings', and we were allowed to pick them, and were always disappointed they didn't stay purple!! Such memories!! Great pic!!!
