Well, the first class didn't do quite as well as I had hoped on their finals exam, so I just counted each question as 1.5 points instead of 2 each! Talk about being in the Christmas spirit. I gave them MY birthday present. Back to trying to sort out some of the mess on my desk.

you need: 125g good black chocolate (in France we have special dessert chocolate with 70%cacao),3 spoons water, 75g butter, 1 egg (only the yellow), 2 spoons icing sugar and cacao powder (not sugared).

I'm not very particular about chocolate either. It all tastes pretty good to me. I don't like it chunky, though ... no nuts. For me, the top choice is Rogers Chocolates in Victoria, British Columbia, Canada.

Shosho - you wouldn't be referring to the 2 lb., 3.3 oz. (1 kg.) box of Truffettes de France purchased at Costco for less than $5 would you? I bought them, and they are fantastic!!!! Other than these little gems, I generally prefer Belgian chocolates, although I do not care for Godiva.

My last post went into cyberspace. What I was saying was that I like Godiva, but have never had Lindt. If it only comes in those nasty little truffle things, I will never try one either. Chocolate is supposed to stand alone or with caramel. By far, though, my favorite is Seroogy's. Growing up, it was only about 7 blocks from my house. I am not a real big fan of dark chocolate.

I feel like I have missed a lot on here the last 2 days. I made it through most of the game of tag, but then my 'puter has been down until now. I have a bunch of holiday greetings on my page. The Californian are probably familar with Sees' & Ghiradelli Chcolates.

There is a chocolatier on Los Feliz in the Atwater Dist. of Los Angeles - that makes better chocolate candies than Sees. I would go there for Easter Gifts.

When in San Fran - a must stop in Ghiradelli - More...

Sees Chocolate is sold here at this time of year. There are kiosks in the malls. Ghiradelli I can get all the time.

Thornton's Chocolates made in Yorkshire are the best chocolates in the world - especially their truffles.

rayray, truffles = icky The only filling chocolate should have (if any) is almonds or caramel.

Eve and Kathy, have had Ghiradelli once. Don't remember if I liked it or not. I guess I'll have to go get some to find out

Don't wanr any jealousy but at lunch with the girls today I chose Chocolate Mousse instead of Tarte Tatin. I have eaten Chocolate Mousse the world over but none can beat that made at our golf club by our wonderful chefs - eat your hearts out ladies it was divine.......

Yes, Kathy, spoon=tablespoon; as to icing sugar, it's "sucre glace" in French, a very thin powder sugar. I sometimes add a spoon of "cognac" (only for adults of course!)

Keith, We bought 2 Rogers chocolates when we were in Victoria,BC a few years ago and I must admit they were to die for. I do like Lindt, especially when bought in Switzerland and Germany. I believe they have to add something extra when exporting to here because of our warmer temperatures. Stayed More...

Angie, some truffle centers I avoid; 1)Anything chunky 2)Fruity flavors, but some flavors go nicely with chocolate, like rum, cognac, caramel, and mint.

Gosh my mince-meat is like pure alcohol this year!
Green Chatreuse (whew!), Brandy and exotic dried fruits are all rolling and swinging about together in an alcoholic jungle of delight.
Each single mince pie will be enough to send any hardened drinker quite rollicking.
